1. You would never say "Since young."
2. You must make your verbs have the same tense.
"Since their son was very young, his parents knew that he was intelligent."
I also added "very" because I believe the statement sounds too weak without the emphasis. The sentence is correct with or without the "very."

Bear in mind that "since" can also mean "because". The above sentence could be misinterpreted as: "Because their son was very young, his parents knew that he was intelligent." You can avoid this with:Since their son was very young, his parents knew that he was intelligent.
Since his early youth, his parents knew that he was intelligent.
