From the book: She published many books and articles that allowed American people to understand different cultures.

That american right there? Are those supposed to be capitalized all the time?

Like:

- There are many Spanish and French in our school
- I'm not American, I'm Filipino.
- I particularly like Japanese girls.

PDM Xkalibur is correct in his answer.

But please note that the words you mention are not nouns but adjectives.

It doesn't matter, though, since all nouns and adjectives relating to nationality are capitalized:

Note too that your sentence...
There are many Spanish and French in our school

...should really be:
There are many Spanish and French people (students/boys/girls/teachers/dogs etc) in our school.
