In dictionaries, if 'T' means transitive and 'I' means intransitive, what does 'L' mean?

It can be, as in

but here it functions as a copular, meaning 'turn out to be'.

3. Can a transitive verb be followed by an adjective which is not followed by a noun like ' proves too enticing'?

Not normally, but a copular, of course, can.
