two questions

Most actors who are excellant in their craft and respect it consider the non-verbal to be key into how they "live-out" their character and make them real.
1. Why doesn't the writer use 'it' instead of 'them' because they use 'their character' not 'their characters'?
2. Can I use 'their crafts and respect them' instead of 'their craft and respect it'?
