Do we say " Engineer assistant " or assistant engineer?

The second. 'Engineering assistant' would also be possible.

is here 'of' possible: (the) assistant of the engineer? is here Saxon genitive possible: engineer's assistant?

You could, in fact, be the/an engineer's assistant, but your job title would still be more likely to be one of the options previously stated.

*The assistant of the engineer would be highly unidiomatic, but you might say e.g. I am working as an assistant TO the engineer.
