Hello. If I would like to say, one airline stated that there were two flights delay due to an engine failure. Should it be “two flight delays”? or “two flights delay”? thank you

Two flight delays would be grammatical.

Alternatively,

There are two flights delayED...

Is your example one flight that got delayed two times, or is it two different flights?

'Two flight delays' could potentially have either meaning, depending on context.
