recipe number 2
palestinian recipe
Mutabbal (EGGPLANT salad)
2 Large eggplants
2 garlic cloves
2 table spoons of "Tehina"
4 table spoons of lemon juice
1/2 green chili pepper
salt and olive oil to taste
Remove the head of the eggplants, and make two horizontal incisions with the knife on each side of the eggplant. Place the eggplants under the grill for 30 minutes, until the skin is almost burnt. In the meantime, mix the two tablespoons of Tehina with the lemon juice until it becomes a smooth light beige uniform paste. Remove the eggplants, and place them on a plate. Bring a deep dish and open up the eggplants. Start removing the inside of the eggplants and placing it in the deep dish. Make sure you don't take any of the skin. The insides of the eggplant will be slightly watery, so mix it with a fork which would at the same time cut it into smaller pieces, almost a paste though not uniform in any way. Add the Tehina paste and mix well with the fork. Crush the garlic cloves with the chili pepper and add to the mixture. Mix well. Add salt and olive oil to taste.

THAI ~ from Ocha Classic resturant: Chicken-coconut-soup
PERSIAN ~ The yogurt drink and the kabob's
JAPANISE ~ the mixed plate specials & sushi rolls with shashimi
CHINESE ~ Orange Chicken and curry dishes.
VIETNAMESE ~ PHO 999 resturants:their yummy noodle soups!

I learned this recipe from a friend from Spain the first time she spoke to me.
My other firend was called to the tele when we first were introduced together...she had to leave us alone because it was a business call. I was a young mother of about 22 at the time...one tiny son and another on the way. I was very shy at that time. I was sitting wondering what to say when Eva
(sounds like Ae-va) said "have you ever made a tortilla la potata" (PO-Tah-TAh)
( I was happy she had said something so interesting)
I said well, no what is that? (...or some similar interested words) She told me thus:
"You take the potatoes and cut it into small thin pieces (enough for the persons to eat it) one two three...it depends
you use the grater...to add a small amount of carrots...just enough to add a tiny bit of sweetness...just a tiny amount...
you then add onion, to your taste, and the tomato, at least one tomato, and the tortillia....
you cut it in tri-angles like they do to make the tortilla chips...now you place each thing into the frying pan in order of thickness and timing....do you follow?"
(I did) Now the dish is cooking and the tortilla pieces are added toward the end....with the tomato, which take less time to cook .
A few minutes after the potatoes are in the fryer...with oil, you add each ingredient in order of how you want them to be done.
(At least that is how I remember the recipe).
Eva really knew how to start a conversation! I will never forget this recipe.
(but I may have added the tomatoes??? I cant remember now)
hope you like it.)

I think the dish may be topped with melted (grated)cheese ...you just turn off the pan and put the grated cheese on top for a few minutes to melt from the heat of the dish...and it is meant to be eaten with salsa if you like hot things like I do. :)

dear ahmaed thank you for the different recipe...but honey where is the omlet you promised??? lol, I was waiting for the omlet recipe!!!

you know what is really stupid? I forgot to say the eggs with the tortilla la potata...there are eggs if I remember that is what makes it all come together so well glomming on to the eggs (scrambled of course) I think that was why I started the thought anyway... because omlet + eggs...tortilla la potata... with eggs!
I hope no one used the recipe yet! sorry people I was stressed with my lessons at school!

school is out!!! yippie!
