Potatoes with Cilantro…A Mediterranean side dish and a meal!

It's one of my favorites, especially for dinner. It's easy and it doesn't take a lot of time to prepare.

Ingredients: (for one person )
2 boiled potatoes
1 big clove of garlic (chopped)
2 table spoons of corn oil or olive oil
3 table spoons of chopped cilantro
2 table spoons of lemon juice (optional)
-------------------------------
1- Peel and dice the potatoes. (I don't like to peel the potatoes before I boil them, 'casue the skin gives them a good flavor. But make sure that you wash them very well before boiling)
2- Heat the pan and put the oil and the garlic and mix for 2 min.
3- add the cilantro and mix for 2 min and turn off the stove.
4- add the potatoes and mix them together with the lemon juice.
5- serve it in a dish with some toast.

Ummmmm!!! jumi jumi,

Lady bird is too easy, thank you very much. Just in this days I´m doing a reestructuration of my diet. boilled patatoes have low degree of potasium, then I could eat them.
Any other with nothing of protein dear????

Hi! There..... What about if you add garlic to the potatoes? That tastes delicious!!!

but I don't like to add more than one big clove :roll:

Is that what you usually have for dinner in your country? I mean do you usually have this to eat?
As here in Costa Rica you can have that but with rice, beans, salad and more things.... =0

Yes. We usually have it as a side dish with rice and chicken, but it's a BIG dinner for me :P

Well, it is interesting how culture changes from one place to other, if we could have just potatoes to eat we could die, as well as if you eat rice everyday.
