It is then held very briefly (ca. 0.5 s) directly into an open flame, causing it to puff up with steam like a balloon.

This leaves the outside of the pavlova a crisp crunchy shell, while the interior remains soft and moist.

I only know a few of them.

Chapati is from India
Pho is from vietnam
Okonomiyaki maybe Japan
Paella is from Spain(i've seen on the receipe on tv)
