Mexican food

Yeah pretty girl,
Remember that at USA live a hig number of mexicans. Mexican food at USA has been influenced by food of the north of Mexico. I mean that At the states in the north of México people prepare the meals a little different. Example: they eat tortillas, but they are prepared with weath, not corn. They eat a lot of Manchego cheeese, beer, dry meat called "machaca", and some other things.
At USA Burritos are made with wath tortillas, nor corn tortillas.
Do you know what is a Burrito, the same that "Taco".
Burrito in english mean donkey.
There are some other mexican dishes made with tortilla, like "sope":a kind of heavy tortilla, with fry beens lettuce, cheese, chicken, souce.

Chilaquiles: little pieces of tortilla, summerged in tomato souce, with cheese, cream, and chiken. The dish include beens. This is a popular dish mexican men think is a medicine for the hangover.
After a night with to much alcohol, peoples only want a "chilaquilitos please".

Of course they are mexicans. Remeber that when the conquers come to México, indians use to prepare tortillas. Spanish people learn to eat tortilla. Mexicans knew the "secret" to transform the corn in different and special meals.
Mexican gastronomy is not only deliciouse but also plenty of cultural and historic notes.
Example. Do you know that Moctezuma emperor use to eat in a big table where there were more than 200 dishes. Maybe you could think that I´m crazy or I am a lier because any man could eat these big number of dishes.
Let me tell you that emperor only eat a very very little part of the dishes they choose after see them. And what happen with the rest of food?
After Moctuma eat, all the court eat the rest of the food. It was a rule that Moctezuma must to eat alone, include his children eat after him. He was a proud King.
Another note: if Moctezuma decide to eat fish any day, servants used to go to Veracruz, a state in the line of the sea in order to fhising. You could think that he eat the fish a week after they decided, because in that time there was not airlines. Not friends, at México there were a system of transportation for the kingdom, similar that some competence at the olimpic games called "relay race" and then Moctezuma could eat fish at the hour or lunch or dinner.
If you could get the book "The Indians of México and the New Spains", by Fray Bartolome de las Casas, you must to buy it.It has very interesting notes about mexican culture before conquers arrive.

Actually I wanted to ask you this, because there's a well-known restaurant chain in the States called Taco Bell, where they serve burritos.

As I told you between tacos and burritos are a veru little difference. The first are prepared with wheat tortilla and the second with corn tortilla.
I prefer the second, the flavor of the tortilla is better, and you can put all what you want into it: Mole, chicharrón (fry pork skin), rice, fry meat, chiken, vegetables, etc.

in México is very usual the spicy food, but is not always like that.
Also, the next time you visit a Mexican restaurant try the guacamole, you're going to love it!
