I think both are correct. Let's make a question for each one:
-Who served you last night?
Here the answer can be the first one which is" the waitress, who was very impolite and impatient, served us."
-Who was very impolite and impatient?
"the waitress who served us was very impolite and impatient."
Amn't I right?

we can also make a question, how is the waitress?
the stress is on the waitress so the main clause is the 1st sentence.
I think the suitable one is : the waitress who was very impolite and impatient served us
