Is this sentence grammatically correct? (subject-verb agreement)

Measuring blood pressure and heartbeat is the most important thing to do.

Because we can see "measuring blood pressure and heartbeat" as one event (usually performed at the same time in the same room in the same chair and perhaps with the same machine), your sentence is correct and idiomatic.
