Is this correct to say :
I wish I were a Doctor.

I wish I were a doctor.
It is correct English, but many speakers, even native speakers, would say:
I wish I was a doctor.
Note that it is doctor NOT Doctor. No need for capital letter, unless part of a name (I spoke to Dr Smith).
