What do you call it when a person proves what their are denying?

I am looking for the word that describes when a person makes a statement that proves the thing they are denying. Think of a kid throwing a temper tantrum because they did not their way while shouting, "I am not a spoiled BRAT!" Think of a person saying something like,

"I hate the taste of chocolate cake because it is so scrumptious and delicious."

Here is another example,

" I never hold grudges, but I will never forget or forgive you for what you did."


Is there a word that describes this action?
