I have a question below...

What's the difference in meaning or grammar between the phrases 'way of doing something' and 'way to do something'?

No difference in meaning. Grammatically, their analysis would differ slightly in that 'of doing' is a prepositional phrase, while 'to do' is an infinitive phrase.
