I learned that we can use a "much" in modifying past participle as "I am much interested in this novel".

But why do you use a "very" in past participle as "a very frightened animal"?

When an -ing or -ed form is capable of being modified by 'very', we normally classify it as an adjective, so the rule you learned holds good!
