Which should you choose to write (a) or (b)

(a) To become a JOCV volunteer would be one of the greatest challenges of my life.
(b) Becoming a JOCV volunteer would be one of the greatest challenges of my life.

A good question!

In fact, both are possible but in general, for something theoretical/imaginary, we tend to prefer the infinitive, and so (a) would be preferable.

Compare

Becoming a JOCV volunteer WAS one of the greatest challenges of my life.

with regard to something actually accomplished.
