The phrase "I won't have much money" is grammatically correct, but why can't I say "I will have much money"?

You can, but it would be considered unidiomatic for normal daily/spoken use.

Outside very formal, written contexts, 'much' is rarely used in a positive-assertive sentence.
That is to say, its use is generally restricted to either NEGATIVE sentences (e.g. I don't have much...) or INTERROGATIVE sentences (e.g. Do you have much...?).
