Before and Until

Hi all!

Can someone help me with the below sentence? Why can't I use until to replace before? I thought they meant the same in this sentence... :(

There's still a long way to go before it is fully accepted and understood.

Either is possible here, but 'before' is the more idiomatic choice in this construction.
