stay up and write

a. This was the paper he wanted to stay up all night and write.
b. This was the paper he planned on staying up all night and writing.

Are these sentences both grammatically correct?

Many thanks

Yes, but be aware that #2 is relatively informal and would be more idiomatic without the 'and'.
