Here are some cheese recipes for cheese lovers like you!!!

Crumbed chicken with pancetta & mozzarella

Preparation Time 25 minutes
Cooking Time 20 minutes

Ingredients (serves 4)

* 4 (about 150g each) single chicken breast fillets
* 1 tbs red pepper tapenade or sun-dried tomato pesto
* 20g baby spinach leaves
* 4 thin slices pancetta, halved
* 70g mozzarella, thinly sliced
* 50g (1/3 cup) plain flour
* 2 eggs, lightly whisked
* 1 tbs milk
* 90g (1 cup) dried (packaged) breadcrumbs
* 2 tbs olive oil
* Mixed salad leaves, to serve

Method

1. Use a small sharp knife to cut a horizontal slit in the thickest part of each chicken breast to create a pocket. Spread 1 teaspoon of the tapenade or pesto evenly inside each pocket. Divide spinach leaves, pancetta and mozzarella among the pockets and use toothpicks to secure.
2. Place the flour in a shallow bowl and season with salt and pepper. Whisk together the egg and milk in a shallow bowl. Place the breadcrumbs on a large plate.
3. Coat the chicken in the flour and shake off any excess. Dip the chicken in the egg mixture, then the breadcrumbs, pressing firmly to coat. Place the chicken on a plate, cover loosely with plastic wrap and place in the fridge for 30 minutes.
4. Preheat oven to 180°C. Line a baking tray with non-stick baking paper. Heat the oil in a large non-stick frying pan over medium heat. Add the chicken and cook for 2-3 minutes each side or until lightly browned. Transfer the chicken to the lined tray.
5. Bake in oven for 8-10 minutes or until the chicken is golden brown and cooked through. Set aside for 5 minutes to rest. Divide the crumbed chicken among serving plates and serve immediately with mixed salad leaves.

Classic macaroni cheese

Preparation Time 10 minutes
Cooking Time 6 minutes

Ingredients (serves 4)

* 400g macaroni
* 50g butter
* 2 tbs plain flour
* 2 cups (500ml) milk
* 2 cups (250g) grated cheese (gruyere, tasty, vintage)
* Chopped parsley

Method

1. Cook the macaroni in a large pan of boiling water according to packet instructions (different brands may vary in size & cooking times) until al dente.
2. Meanwhile, melt the butter in a medium saucepan and add the flour. Cook, stirring, for 1 minute over medium-low heat.
3. Gradually add the milk, stirring until smooth. Stir gently until the mixture comes just to the boil, then reduce heat and simmer for 2 minutes. Remove from the heat, add the grated cheese and stir until melted and smooth.
4. Drain pasta and return to the pan. Pour cheese sauce over the pasta and stir until well coated. Season with salt and white pepper to taste. Serve immediately sprinkled with chopped parsley.

Lazy lasagne

Ingredients (serves 4)

* 7 tomatoes, chopped
* 300g fresh lasagne sheets
* 2 x 100g packets Primo Low Salt 97% Fat Free Shaved Leg Ham, chopped
* 1 zucchini, grated
* 1 1/4 cups grated mozzarella cheese
* 1 cup purchased fresh creamy bechamel sauce

Method

1. Preheat oven to 200°C. Lightly grease a 6cm deep, 17cm x 27cm (base) ovenproof baking dish.
2. Spread one-third of the chopped tomatoes over base of prepared dish. Cover with a layer of pasta, trimming if necessary. Sprinkle with half the ham, half the zucchini, half the remaining tomatoes and one-third of the grated cheese. Cover with another layer of pasta. Sprinkle with remaining ham, zucchini, tomatoes and half the remaining cheese. Top with remaining pasta.
3. Spread bechamel sauce over pasta. Sprinkle with remaining cheese. Bake for 40 to 45 minutes or until golden and pasta is tender. Stand for 10 minutes. Serve.
