Or
My father and mother's car.

My father and mother's car is correct.

Use the "of" possessive form to remind yourself: the car of my father and mother. The car of Tony, Michael and Sinead would be Tony, Michael and Sinead's car.

The rule is that the last noun in a list takes the possessive form.
