It's one of my favorites, especially for dinner. It's easy and it doesn't take a lot of time to prepare.
Ingredients: (for one person )
2 boiled potatoes
1 big clove of garlic (chopped)
2 table spoons of corn oil or olive oil
3 table spoons of chopped cilantro
2 table spoons of lemon juice (optional)
-------------------------------
1- Peel and dice the potatoes. (I don't like to peel the potatoes before I boil them, 'casue the skin gives them a good flavor. But make sure that you wash them very well before boiling)
2- Heat the pan and put the oil and the garlic and mix for 2 min.
3- add the cilantro and mix for 2 min and turn off the stove.
4- add the potatoes and mix them together with the lemon juice.
5- serve it in a dish with some toast.

As here in Costa Rica you can have that but with rice, beans, salad and more things.... =0
