In the sentence, 'it's a sobering finding', can 'off-putting', 'saddening' and 'disheartening' equally replace 'sobering'? Do they have more or less the same meanings?

They all have a "negative" connotation but they are not "the same" as "sobering". They might all be "sobering" but in different, more precise ways.
